Raspberry Coconut Overnight Oats [Vegan]

So what is so great about overnight oats that it is now one of the most popular breakfast recipes we know?

You don't have to cook them (deal breaker), you can make them the night before, healthy and extremely filling, they can be eaten warm or cold, simple to make, and an endless amount of possibilities when it comes to recipes. 

My favorite way to make them is by preparing my jar the night before, refrigerate, and then wake up in the morning and enjoy them with a hot cup of tea. 

Today I am sharing with you one of all time favorite overnight oats recipes, made with fresh raspberries, homemade nut milk, and shredded coconut. 

Raspberries are not only delicious but also brimming with skin benefits, including high in antioxidants (anti-aging), contain anthocyanins that maintain a youthful complexion, and have Omega-3 and Omega-6 fatty acids that fight skin related conditions like eczema and psoriasis. 

Did you know that pure organic almond milk contains 50% of the recommended daily amount of vitamin E? It is full of antioxidant properties that keeps your skin glowing and protected against sun damage.

 

Ingredients:

1/4 Cup Steel Cut Oats

1/4 Cup Almond Nut Milk

1/4 Cup Fresh Raspberries

1 Tsp Raw Honey 

Shredded Coconut

 

How-To:

In a mason jar, combine oats, milk, honey, shredded coconut and raspberries. 

Tighten lid and shake well to mix.

Refrigerate for at least four hours (overnight recommended).

When ready to eat, remove lid and top with more shredded coconut and raspberries.
