EASY RAW BROCCOLI SALAD

Now that the holidays are over, it’s time to set intentions and kick start the new year with a body detox. The good news is that you can nourish your body with healthy meals, fruits and veggies to reset and get back on track.

One of our favorite go-tos this season is this easy Raw Broccoli Salad. It’s healthy, quick to make and full of nutrients. Broccoli is rich in essential vitamins, antioxidants and fiber to support a healthy body. Cranberries are known to contain 98% water and high levels of antioxidants to give you radiant skin.

INGREDIENTS:

8 cups broccoli cut into bite sized pieces

1/3 cup red onion diced

1/2 cup dried cranberries

1/4 cup almond slices

1/2 cup bacon bits (optional)

3 tablespoons cider vinegar

2 tablespoons sugar

1 cup vegan mayonnaise

A pinch of salt and pepper

HOW-TO:

1. Whisk together cider vinegar, sugar, mayonnaise, salt and pepper in a medium bowl. Set aside.

2. In a large bowl, combine broccoli, onion, cranberries, almond slices, and bacon bits (optional). Pour the prepared dressing over and mix well.

3. Refrigerate for an hour before serving. Enjoy!
