Cucumber Mint Salad
As the warmer weather begins to sneak in, we start to crave cooler and refreshing foods, like this cucumber mint salad. We love how tasty this salad is on its own or even as a side to a bigger spring meal. By draining the cucumbers, they stay nice and crisp in the vinaigrette.
Added bonus: Mint has a long list of benefits, like aiding in digestion or treating headaches. In aromatherapy, the smell of mint also helps with depression and fatigue, which makes this salad the perfect end to a long day of spring cleaning!
INGREDIENTS
2 thinly sliced cucumbers
1 tsp salt
1/2 cup diced red onions
2 tablespoons red wine vinegar
2 tablespoons extra virgin olive oil
2 tablespoons agave
1/4 teaspoon black pepper
1/4 cup chopped mint
HOW-TO
In a colander, combine cucumbers and salt. Let drain for 30 minutes.
Meanwhile, soak onions in a small bowl of ice water for ten minutes. Drain well.
Place cucumbers on a paper towel and pat dry. This will ensure the cucumbers stay crunchy in the salad.
Whisk the olive oil, vinegar, agave, salt, and pepper.
Combine the liquid mixture with the cucumbers, mint, and red onion. Mix well.
Chill for twenty minutes. Serve cold.
