Berry Baked Oatmeal

Hi everyone! Maria here from Spinach for Breakfast.

Oatmeal is one of my all time favorite comfort foods! Whether it’s warm oatmeal on the stovetop, overnight oats that I eat cold from the fridge or a baked version, I always feel nourished and satisfied when I am done eating.

Speaking of nourishment, two of my all time favorite products to nourish my skin are the Night Time Antioxidants Repair Serum and the Synergie[4] Immediate Skin Perfecting Beauty Masque! No matter the season, I am always battling dryness. These two products have been doing wonders in the areas of hydrating and brightening! And the best part is, I can make oatmeal in about the exact time I need to leave my masque on. I’ve always been one for multitasking. ;)

Recipe below!

INGREDIENTS:

  • 2 cups of rolled oats
  • 1 teaspoon of cinnamon
  • 1 teaspoon of baking powder
  • dash of sea salt
  • 2 large ripe bananas (1 cup mashed)
  • 3/4 of nut milk
  • 1 tablespoon of maple syrup
  • 1 egg
  • 1 teaspoon of vanilla
  • 1 cup of mixed blueberries and strawberries
  • 1 cup of Pecans (optional)  

HOW-TO:

  1. Preheat the oven to 350f.
  2. Mix the dry ingredients together.
  3. In a separate bowl mix the wet ingredients together (except for the berries).
  4. Pour the wet ingredients into the dry and mix together until combined.
  5. Fold in the berries.
  6. Pour into a greased or lined square baking pan and top with additional berries if desired.
  7. Bake for 35 minutes and then allow to cool for 10 minutes before slicing.
