As springtime approaches, we are currently loving this gorgeous fresh Arugula Salad with Truffle Lemon Vinaigrette. Thanks to its pretty shades of vegetables, this superfood salad literally brightens our day with its wonderful flavors. 🌷
Arugula is a leafy green vegetable rich in antioxidants, vitamins and carotenoids. Crunchy radish adds a refreshing flair while creamy avocado supports skin with healthy fats.
Warning: this salad may be too pretty to indulge, but you won’t regret it!
INGREDIENTS
4 cups arugula leaves, torn
6 radishes, assorted colors, trimmed, and thinly sliced
1 avocado, sliced
ÂĽ cup pumpkin seeds (optional)
Small diced tomatoes
1 tablespoon truffle-flavored olive oil
1 tablespoon lemon juice
Pinch sea salt
Freshly ground black pepper
HOW TO
1. Toss together arugula, radishes, avocados, and pumpkin seeds (optional).
2. Drizzle with truffle-flavored olive oil and lemon juice.
3. Sprinkle with a pinch of sea salt and freshly ground black pepper. Enjoy!
